Gallon Glass Jars In The US Tomorrow
What is THAT!" hollered my young daughter when I opened the box we'd just gotten in the mail. Floating inside the plastic bag inside was a whitish disk with brownish threads hanging from it that looked much more than a bit like a very flat jellyfish.
"That," I said, "is a kombucha...thingie," I completed lamely. How to explain to a child what a symbiotic collection of bacteria and yeast (aka "scoby") is? Because that is what we'd just gotten within the mail, a "thingie" commonly known as a kombucha mushroom, although it's not a mushroom at all.
" yelled my daughter. Maybe it is, added her father. One thing led to another, and we named our scoby Gonzales--Alien Gonzales, get it? In no way mind.
Truth is, wine makers have been trained tips on how to make wine, and of course they have recipes. But when they make their wine they also change things, like the form of grape or quantity (if any) of added sugar, or the brand of yeast they use.
Why, you might be asking yourself, do you have an alien-like organism floating in a vat of sweet tea inside your kitchen? Ah, so that it'll turn the tea into kombucha, a drink with both incredible flavor and fantastic powers for healing. Or at the least so its adherents (and a few studies) say.
When I'm on a regular basis drinking kombucha, my digestion is better, my skin improves and my blood sugar appears far more stable. When I initial started drinking it, my gray hair even began coming back dark, but that was a passing trend at best. All of this is fully subjective in my case; I have no clear proof that drinking kombucha did any of this definitively and needless to say Your Mileage May Vary. But I can tell you definitively that kombucha is delicious and inexpensive to create yourself. You can pay upwards of $3 for a little bottle of it at the wellness food store, or for the cost of five plain old tea bags and also a cup of sugar make a big batch of it yourself for pennies a bottle.
To make two gallons, you'll have to have two cans of concentrate, two teaspoons of wine yeast, 1 teaspoon of yeast nutrient, two pounds of sugar as nicely as a pound of bananas. Bananas could appear to be a strange ingredient to add to wine, but since they are quite bland, they do not interfere using the grape flavor but add immediate body and smoothness to the wine.
Making Kombucha
The very first step in brewing kombucha is to obtain a scoby. (That's not really Gonzales; it's a thing like Gonzales XXIV.) It should be quick in case you live in a larger region to discover somebody with a spare scoby to give away via Freecycle or Craigslist--heck, just email your pals and I bet you'll turn 1 up. If, however, you're out inside the middle of scoby-less territory, I bought mine at Kombucha.org, which is also a great source of information. You can also attempt the International Kombucha Exchange, exactly where you'll discover folks who will give scobies away.
Once you have your scoby, you'll want to keep it inside the fridge in the kombucha it came in until you're prepared to make use of it.
You will also need to have an eight ounce glass bottle to activate the yeast, a glass bowl, a two-gallon bucket with a lid, a siphon, two one-gallon glass jars and some cotton wool.
Peel and slice the bananas, place in the bowl and cover with boiling water to steep. Leave the bottle in a warm location (around 70 °F) for six hours, and let the bananas sit for the identical period.
* three 1/2 quarts of filtered water--the chlorine in tap water can hurt your scoby! Filter the water via a Brita or other water filter, let it sit out overnight to let the chlorine evaporate (happy thought, no?) or use bottled water.
* 1 cup regular old white sugar
* 5 regular old black tea bags--you can get as fancy as you like with the tea, but I use garden selection restaurant supply tea bags. Red Rose, Lipton, whatever. If you want to experiment with flavor, try unique sorts of tea like green or white, or substitute a bag of herbal or spice tea for one of the black tea bags. I like putting in a bag of Yogi Tea.
* A massive pot
